Scotts Valley has a new sandwich company, serving a wholesome alternative to the traditional sliced deli meat sandwich.
The Redwood Sandwich Co., located in the Camp Evers shopping center at 3105 Scotts Valley Drive, offers a diverse menu that satisfies appetites across-the-board.
“Our first day was April 17 — we did a free sandwich day, and then the real day of business was April 18,” said owner Kaitlyn Bracken.
Kaitlyn and husband Ben Bracken — both Brookdale residents — started the business with the intention of providing sandwiches with house-made ingredients, sides, and soups.
“We roast all of our own meat, we do real stuff, and we are going to make as much as possible from scratch,” she said.
The new sandwich company is currently looking to implement more local and organic ingredients into their menu, but right now the primary focus is on-site production and getting staff ready for service.
“We grill our own tri-tip, and we roast our roast beefs,” manager Matt Crandall said. “…We didn’t want to do anything deli sliced, we wanted it to be like a homemade sandwich, something different.”
The menu offers 17 sandwiches from the B.L.T.A to the Veggie, which contains cream cheese, veggies, and balsamic vinaigrette.
All soups and sides are made on location as well.
“We make mac salad, a pesto pasta salad, potato salad, and mac and cheese,” Crandall said.
His favorite sandwich is the tri-tip with BBQ sauce, sharp cheddar cheese, and grilled onions.
“I am between the California Club that has the turkey, bacon, and avocado, and the chipotle one because I like spicy, its got jalapenos and chipotle sauce on it,” Bracken said.
All of the breads come fresh daily from Sumano’s Bakery in Watsonville, Crandall explained.
“I enjoy working here, its really fun, and there are a lot of good people in the community so far and they seem to be really outgoing and enjoying what we are making,” he said.
